  1. Step 1

    Preheat oven to 180°C. Lightly grease a 24cm (base measurement) loose bottom flan tin.

  2. Step 2

    Combine the zucchini, carrot, eggs and oil in a large bowl.

  3. Step 3

    Sift the flour over the vegetable mixture and stir to combine. Stir in the parmesan and cheddar. Season with salt and pepper.

  4. Step 4

    Spoon into the flan tin and top with onion rings. Bake for 40-45 minutes or until golden. Serve with salad leaves.
