Green bean and snow pea pasta salad

Pasta gets a new twist with beans and snow peas in this stunning summer side salad.

  1. Step 1

    Cook pasta in a large saucepan of boiling, salted water, following packet directions until tender. Drain. Rinse under cold water. Drain well.

  2. Step 2

    Meanwhile, cook beans and snow peas in a small saucepan of boiling water for 2 minutes or until just tender. Rinse under cold water. Drain. Cut into 3cm lengths.

  3. Step 3

    Place bean mixture, zucchini, capers, onion, dill and cooled pasta in a large bowl. Season with salt and pepper. Add dressing. Toss to combine. Add avocado. Toss gently. Serve.

Serve with smoked or grilled salmon, pan-fried pork fillet or cooked medium prawns.
