Zucchini and ham 'rainbow' slice

This zucchini slice is packed full of veggies and makes for a delightful lunch. With the addition of ham off the bone, and grated cheese, you can't beat this family favourite!

  1. Step 1

    Preheat oven to 180C (160C fan-forced). Grease a 20 x 30 x 4 cm baking dish or tin. Line the base , extending over two sides with non-stick baking paper.

  2. Step 2

    Squeeze the excess moisture from the zucchini. Whisk the eggs and crème fraiche in large bowl. Add flour, half the cheese, carrot and zucchini, mix well. Stir through the ham and shallots, season with salt and pepper.

  3. Step 3

    Pour mixture into prepared dish. Scatter over remaining cheese. Bake for 35-40 minutes or until golden and just set. Serve warm or cold cut into pieces. Serve with extra Creme Fraiche if you like.

This is a delicious recipe for kids if you are trying to sneak in vegetables hence ‘rainbow’ slice. If you don’t mention the veg, it’s a definite winner! You could add grated sweet potato or fresh grated corn if you like.
