Chilli beef fried rice

Make this dish extra special and top with a fried egg, coriander and sliced chill.

  1. Step 1

    Cook the rice in a saucepan of salted boiling water following packet directions. Drain and set aside to cool.

  2. Step 2

    Heat half the oil in a wok over medium-high heat. Season the beef. Cook, in batches, for 1-2 mins or until browned. Transfer to a plate.

  3. Step 3

    Add the baby broccoli, baby corn and 1/4 cup (60ml) water. Cook for 3 mins. Add ginger, garlic, spring onion and chilli and cook for 2 mins. Return beef to the wok with the soy sauce and rice. Stir-fry for 3 mins or until heated through.

  4. Step 4

    Meanwhile, heat a frying pan over medium heat. Fry eggs for 3 mins or until cooked to your liking. Divide fried rice among bowls. Top with fried egg, coriander leaves and extra sliced chilli.

You could use a large packet of microwavable brown rice instead to cut down cooking time.
