Asparagus, bean and pine nut salad

Just four ingredients is what it takes to create this fast and fresh salad with asparagus and green beans.

  1. Step 1

    Preheat oven to 180°C/160°C fan-forced. Place pine nuts on a baking tray. Bake for 4 to 5 minutes or until golden.

  2. Step 2

    Meanwhile, cook beans and asparagus in a saucepan of boiling water for 2 minutes or until just tender. Drain. Refresh under cold water.

  3. Step 3

    Place pine nuts, beans and asparagus in a large bowl. Add dressing. Toss to combine. Serve.

Variation: You could use flaked almonds instead of pine nuts.

Serve with grilled chicken, trout or tuna.
