  1. Step 1

    Place sugar and mint in a mortar. Pound with a pestle until coarsely crushed. Divide among serving glasses. Stir in cordial.

  2. Step 2

    Divide lime slices and extra mint among the glasses. Fill with ice. Top with the soda water and Pimm's to serve.
