Beef burger with olives and feta

Feta and olives add a gourmet twist to these traditional beef burgers.

  1. Step 1

    Line a baking tray with non-stick baking paper. Place beef mince, fresh breadcrumbs, crumbled feta, chopped black olives, lightly beaten egg, finely chopped red onion, salt and cracked black pepper in a large bowl and mix until well combined. Divide the mixture into 6 portions and shape each portion into a flat patty. Place patties on prepared tray and refrigerate for 15 minutes. Heat a non-stick frying pan over medium heat. Cook the patties, in batches if necessary, for 3-4 minutes each side or until cooked through.

  2. Step 2

    Split burger buns and lightly toast then spread with whole egg mayonnaise. Place the bases of the buns on serving plates and top with patties, baby rocket leaves, char-grilled capsicum and remaining bun. Serve immediately.
