Roast garlic aioli

Brighten up Christmas Day with this easy mayonnaise variation.

Roast garlic aioli
  1. Step 1

    Preheat oven to 180°C/ 160°C fan-forced. Line a baking tray with baking paper. Place garlic on prepared tray. Spray with oil. Roast for 15 minutes or until tender. Stand for 10 minutes or until cool enough to handle. Squeeze garlic from skins. Discard skins. Set aside to cool completely.

  2. Step 2

    Process egg yolks, roasted garlic, mustard, vinegar, salt and pepper until frothy and combined.

  3. Step 3

    With the motor running, add oil in a thin, steady stream until mixture is thick and creamy. Serve.
