  1. Step 1

    Heat 2 teaspoons of the oil in a large non-stick frying pan over a medium-high heat. Add the apple and thyme. Cook, turning often, for 5-6 minutes or until golden and just tender. Transfer to a plate.

  2. Step 2

    Heat the remaining oil in the pan over a medium-high heat. Add the pork and cook for 2 minutes each side or until just cooked through. Transfer to a plate and cover with foil to keep warm.

  3. Step 3

    Increase the heat to high. Add the balsamic and stock, and boil for 3-4 minutes or until reduces and thickens slightly.

  4. Step 4

    Meanwhile, microwave or steam the broccolini.

  5. Step 5

    Place the broccolini on serving plates. Top with the pork, apple and drizzle with the sauce. Serve with crusty bread.
