  1. Step 1

    Preheat oven to 180C. Brush six 250ml (1-cup) capacity ovenproof dishes with melted butter to lightly grease. Place on a baking tray.

  2. Step 2

    To make the berry sauce, combine the sugar and water in a medium saucepan over low heat and stir for 2-3 minutes or until the sugar dissolves. Increase heat to high and boil for 1-2 minutes or until the syrup thickens slightly. Remove from heat. Add the berries and stir to combine.

  3. Step 3

    Meanwhile, combine the flour and sugar in a large bowl. Make a well in the centre. Combine the milk, butter, egg and vanilla bean paste in a large jug. Gradually pour the egg mixture into the flour mixture and stir to combine. Spoon the berry mixture evenly among the prepared dishes and top with the pudding mixture.

  4. Step 4

    Bake in oven for 25 minutes or until a skewer inserted halfway into the centres comes out clean. Set aside for 5 minutes to cool slightly. Dust with icing sugar and serve with double cream, if desired.
