Ricotta cream

• 250g fresh ricotta
• 2 tablespoons thick cream
• 1 tablespoon icing sugar, or to taste
• 1 teaspoon vanilla essence, or to taste

1. Step 1

   Place ricotta, cream, icing sugar and vanilla in bowl of food processor and process until smooth. Transfer mixture to a bowl, cover and place in fridge until required.
