  1. Step 1

    Cook the noodles in a large saucepan of salted boiling water following packet directions or until tender. Drain. Return to the pan and cover to keep warm.

  2. Step 2

    Combine the curry sauce and coconut milk in a medium saucepan over medium-high heat. Cook, stirring, for 5-6 minutes or until heated through. Add the broccolini florets, prawns and bean sprouts, and cook for 3-4 minutes or until prawns are cooked through.

  3. Step 3

    Divide the noodles among serving bowls and top with the prawn curry. Sprinkle with chilli and coriander, and serve immediately.
