Potato cheeseburgers

Do you fancy a burger, but might be looking for something a little different? Why not add potatoes?! Aioli on top will really hit the spot.

  1. Step 1

    Preheat oven to 200C/180C fan forced. Scrub potatoes well and dry with paper towel. Place onto a baking tray, and prick several times with a small sharp knife. Rub all over with 1 tablespoon of the oil, and sprinkle with sea salt. Bake for 2 hours or until tender and crisp.

  2. Step 2

    When the potatoes are almost ready, heat the remaining oil in a large frying pan over medium heat. Add the onion and cook, stirring occasionally, for 10 minutes or until golden brown. Transfer to a plate. Cover to keep warm. Add the patties to the pan. Cook for 3 minutes. Turn and top with a cheese slice. Cook for a further 3 minutes or until cheese melts.

  3. Step 3

    Cut the potatoes in half horizontally. Use a fork to rough up the cut surface of potato and spread with the butter. Top each base with aioli, lettuce, beetroot, patty, tomato sauce, sliced tomato and the onion. Sandwich with the potato tops.
