  1. Step 1

    Place the zest in a saucepan with the sugar, vanilla pod and seeds, and 300ml water. Stir over low heat until the sugar dissolves, and simmer for 2-3 minutes. Pour into a dish and cool slightly, then stir in passionfruit and cool completely.

  2. Step 2

    Add the orange segments and remaining fruit. Serve with the pancakes.
