  1. Step 1

    Combine the passionfruit pulp, sugar and water in a small bowl. Stir until the sugar dissolves. Set aside.

  2. Step 2

    Cut each banana in half crossways and then in half lengthways. Heat a large non-stick frying pan over medium-high heat. Add almonds and cook, stirring, for 2-3 minutes or until golden brown. Transfer to paper towel.

  3. Step 3

    Add the banana pieces to the pan and cook, turning occasionally, for 1-2 minutes or until golden brown.

  4. Step 4

    To serve, divide the banana pieces among serving plates. Top with the ice-cream and drizzle with the passionfruit syrup. Sprinkle with toasted almonds and serve immediately.
