Satay beef stir-fry

    Heat rice following packet directions.

    Meanwhile, heat half the oil in a wok over medium-high heat. Add half the beef and stir-fry for 2 minutes or until brown. Transfer to a bowl. Repeat with the remaining beef, reheating the wok between batches. 3. Heat the remaining oil in the wok over medium-high heat. Add the vegetables and stir-fry for 2 minutes. Add the water. Cover and cook for 1 minute. Add the beef and sauce, and stir-fry for 1 minute or until heated through.

    Divide the rice among serving dishes and top with the beef mixture to serve.

Budget tip: Replace the beef stir-fry strips with 400g chicken thigh fillets, cut into strips.
