Quick steamed treacle pudding

“Because sometimes you've just got to have a proper, beautiful sticky pudding ”
  • butter , for greasing
  • 175 g plain flour , sifted
  • 50 g soft dark brown sugar
  • 75 g vegetable suet
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons ground ginger
  • 1 free-range egg
  • 1 tablespoon golden syrup , plus extra for the basin
  • 1 small orange , finely grated zest and juice of
  • ½ teaspoon vanilla extract
  • 150 ml milk
  • cream or custard , to serve
  • Method

    1. Grease a 1 litre pudding basin well with butter. Mix all the ingredients together in a bowl. Pour some extra golden syrup into the pudding basin (about 5 tablespoons) and pour the mixture in on top of it.
    2. Cover the pudding with a pleated sheet of greaseproof paper and tie in place with string. Cook on the medium setting of your microwave (750W) for 12 minutes. Let it stand for 10 minutes before turning out.
    3. Serve with cream or custard.
